Locally sourced meats
We’ll start with Scotland’s national dish. Haggis is a spicy meat pudding, traditionally served with mashed neeps (turnips) and tatties (potatoes). But there are lots of different ways to serve and enjoy our national dish.
We take pride in offering our guests the finest meats, sourced from local farms renowned for their quality and sustainability. Our pork comes from Petley Farm, where free-range pigs are carefully reared in the beautiful surroundings of Balintore. For a truly artisanal touch, we source our small-batch pancetta from Bogrow Farm, a family-run livestock farm just 40 miles north of Inverness. Our hill-fed Cheviot lamb, sourced through the esteemed butchers at Grant’s of Speyside, is raised at the foot of the Cairngorm pastures, delivering a rich and tender flavour.
Simpson Estate celebrated across the UK for its exceptional venison and game, provides us with perfectly lean, sustainably sourced venison that pairs exquisitely with Highland flavours like juniper berries. As a guest, you’ll savour these local delicacies, prepared by our skilled chefs and experience the true taste of the Highlands.
Seafood
At Ness Walk, we take great pride in sourcing the finest seafood from Scotland’s waters, ensuring that every dish on our menu reflects the rich flavours of our coastal heritage. Hugh Ross hand-dives our scallops off the coast of Noup Head in Orkney, bringing them to our kitchen fresh and at their peak.
We handpick Isle of Lewis mussels for their rich flavour and generous size, ensuring they rank among the best in the region.
We source our native brown crabs directly from Lochinver Harbour, where day creel boats land the catch. This method allows us to select only the highest quality crabs, which our chefs then transform into delicious dishes.
We source our salmon from Loch Duart in North West Sutherland, where it’s farmed in low-density environments that promote slow, natural growth. This careful process delivers superior quality fish with a flavour that truly stands out.
For shellfish, we rely on Keltic Seafare, known for its top-quality live offerings such as hand-dived scallops, live langoustines and live lobsters. They source from the crystal-clear ‘Class A’ waters off the North-West Highland Coast, ensuring only the best shellfish make it to our plates.
If you like fresh white fish, including cod and hake, ours is sourced directly from North Sea fishermen by Campbells. This seafood is often prepared in our kitchen on the same day it’s caught. This guarantees freshness and flavour in every bite. Each of these ingredients plays a vital role in our commitment to serving the very best of Scottish produce. Cheese
Scotland is famous for its delicious cheeses, and at Ness Walk, we proudly serve a selection that includes a bold blue, a creamy soft cheese and a rich Tain cheddar. We pair these cheeses with malt loaf, pickled walnuts and fruit chutney for a perfect combination. We get all our cheeses from Connage Highland Dairy and Cheese Pantry, a family-run dairy less than 30 minutes from our hotel. If you’re curious about where these cheeses come from, Connage Dairy is just a short drive from Inverness and definitely worth a visit.
Breakfast
At Ness Walk Hotel, our Scottish breakfast is the perfect way to start your day. Every morning, we serve a full Highland breakfast in our restaurant, featuring locally sourced ingredients like pork sausage, egg, bacon, haggis, black pudding, mushroom and tomato. We support local farms and producers, so you get a true taste of the Highlands. We also offer vegetarian options, making sure everyone can enjoy a hearty, flavorful breakfast.
Tablet
Tablet is Scotland’s delicious twist on fudge, celebrated for its sweet, crumbly texture and velvety richness. This classic Scottish food offers the perfect sugar hit, especially when enjoyed with a cup of tea or coffee. At Ness Walk Hotel, we elevate this treat with our whisky tablet, which melts in your mouth. Each evening, as part of our turndown service, our team hand-delivers a piece of tablet to your room. It’s our way of providing a sweet bedtime treat.
